Ingredients

2 large cans Refried Beans
1 package Taco Seasoning
15 ounces Guacamole
15 ounces Sour Cream
4 ounces Green Chili mild/diced
Shredded Chedder Cheese
2 cups Pico de Gayo
100 4 ounce cups with lids You can order from Amazon
Pico de Gayo
3 diced Roma Tomato
1/4 cup finely diced Red Onion
1 tablespoon (seeded and diced) Jalapeno
1 tablespoon finely chopped Cilantro
1 lime Lime Juice

    This is ingenious!  I’ve loved a good 7 Layer Dip for 30 years.  What I didn’t love was the mess left behind after people took their portion, or maybe some people helped themselves to a large healthy portion and others didn’t get any and I’ve never liked the idea of multiple hands touching one food.  I’m not a germaphobe but I still look at people and wonder…

    This idea fixed all of my issues plus one more, lines!  Everything is available on Amazon so now I can get these awesome cups and lids for less than $10.  I can make up individual cups so that everyone can have some.   It can either be placed on the serving table as a ‘grab and go’ along side chips that are already pre-packaged in brown paper lunch sacks, or you can spread several out on the party tables with chips.

    Mix the diced green chili's in with the sour cream.

    If you want to walk on the wild side add half a can of diced, fire roasted jalapeno's to the sour cream. It's awesome, but may be a bit to spicy for your friends/family.

    Heat up the refried beans (it's more manageable this way) and add the taco seasoning. Stir.

    How to make Pico

    Chop and dice the tomato's, onions, jalepeno (take the seeds out unless you like it hot) and cilantro. Put into a small bowl. Add lime juice and stir.

    Now that was hard... wasn't it?

    Assembly

    Get your 4 ounce cups out. If you have a small ice cream/cookie dough scooper it'll be helpful during this part of the exercise.

    I find it's quickest and easiest if I focus on one ingredient at a time. Get the beans..

    Add 2 tablespoons of beans to all the cups, when you've emptied the pan with the beans, repeat but with the guacamole. When that's gone, next add about 1 tablespoon of sour cream to all the cups.

    When you're finished with the sour cream push all the cups together and sprinkle shredded cheese into them. Top it with a tablespoon of Pico and put the lid on. You're done!

    Serve with chips.
